Chocolate Tasting

Join Patrick Higgins and Grace Mattingly at Aurora Cooks—the Inns of Aurora’s stunning new demonstration kitchen—for a relaxed and educational tasting experience. Toast with a chocolate soda to pay homage to the building’s history! Taste a variety of chocolate including some local treasures while we discuss the process of “bean to bar.” Enjoy a glass of wine, beer or tea, hand blended to pair with your chocolate. Finish with everyone’s favorite treat a warm cup of sipping chocolate!


  • The process in which chocolate is made from the cacao plant to the chocolate bar in the store

  • The differences between milk, dark and white chocolate

  • What makes a chocolate “craft,” “artisanal” or “bean to bar” as they call it?

  • How to decipher your chocolate wrapper. What does the % mean?

  • Using chocolate in the kitchen: storage, cooking with, the difference in cocoa powders

Complete your culinary journey with dinner at the 1833 Kitchen and Bar. Reservations strongly encouraged.

Classes are open to all and begin promptly. Doors open 10 minutes prior to start time. No early arrivals please. Seating is limited to 12 guests. Tasting Tickets are $45 plus tax. Please register in advance. 

FINE PRINT: Please inform us of any food allergies when registering. As classes are designed for demonstration and not intended to be a meal, separate dishes will not be prepared based on preference. Classes are open to guests aged 18 years and older, and a valid photo I.D. will is required to be served alcohol. Cocktail and wine classes require that all participants be at least 21 years old. If you are unable to attend a class, you must cancel at least 24 hours in advance to receive a refund, retain a credit, or transfer to another class. Without the 24 hour notice, the registration fee is non-refundable. You may, however, send someone to class in your place. Please notify the Inns of Aurora reservation team of your substitution by calling 315.364.8888.
